Check-in!

I hope you are all staying warm during Winter Storm Stella today! We’ve been having a very cozy day at my house… my son slept in (which meant that we all got to sleep in!) and work has been a steady stream of catastrophes that we’re plugging through. I love this time of the day when my son and my husband are home… it’s so quiet, with the two of them napping, my faithful furry friend on his bed in my office as I work, snoring away.

We’re two weeks in now, and things are still going well! I didn’t gain or lose, which is okay … maintaining this week was good considering that I didn’t really make a super great effort in sticking to the plan. So I’ve still got 13 to go and a month left to do it in. All in all I think I’m on track!

This weekend was great, and I had some great food at The Red Hen in Swedesboro to celebrate my Mom and Dad’s birthdays. The beet salad and roasted pork shoulder with grilled vegetables is AMAZING! Lobster ravioli in blush sauce also happened at our table, as did the Bourbon chicken skewers. My nephew ordered the chicken and waffles which was interesting, and everyone loved the wings and potato skins we got as appetizers. Everything was great… Try it if you get the chance!

Work is crazy right now, so I’m going to be MIA while I work on 5 really high priority projects that all need to launch within the next few days. I’ll be surprised if I don’t totally burn out.

SPEAKING OF….. I am going to do the unthinkable (for me) and try to nap. I’m so tired, and if I have to be up all night working I might as well get some rest while I can.

It’s a wrap!

Well, it’s Friday afternoon and we’re calling it! GAME OVER! This week has been rough, so I’m thankful it’s finally done.

In case you’re wondering, I did well on my goals – worked out (ie, pushups and situps) a few times this week and I’m looking forward to some warmer weather so we can get outside for family walks! I bought prenatal gummies so I can start loading up on all that good stuff, and I drank more water (though did not make my goal).

I’ve had some stumbles this week… I ordered the FARMHOUSE SALAD from Saladworks (which is now officially a favorite) and I ate everything… it was sooo amazing.

I also made chicken marsala last night for dinner since my mother in law was over, and ate teriyaki chicken for lunch to celebrate a coworker’s last day at the company. Teriyaki and Marsala wine are not on this plan lol.

But, I did have some successes. I said “no” more than once to sweet treats, ate salad at McDonalds one night and chose the Boathouse Daily Greens drink over a Shamrock Shake. So hey, it could be way worse. 🙂

This weekend is going to be busy but lots of fun. It’s Michelle’s birthday so we’re heading over there to celebrate on Saturday night with some friends. On Sunday we’re seeing Mimi and Pop-Pop, and bringing Italian Rum cake and some cupcakes for the kids.

We had some snow today, and now – only a few short hours later – it’s like it never happened at all. Hello, global warming.

My last update for today is that I BOUGHT MOANA ON DVD last night!!! I can’t wait to actually watch it!!!

Egg in a Sweet Potato Basket

This is delicious. There’s something amazing about the sweetness of the potato, the saltiness of the bacon, and the overall warm contentment of breakfast done well.

This is the recipe I used. 

This is what I did…

  1. 3 raw sweet potatoes in the oven at 400 degrees. I had mine in for a while… much longer than the 45 mins he says to do. Mine were in for 50 mins to an hour, which made them soft enough to pierce with a fork.
  2. I crisped up regular bacon (I know. We should be doing turkey bacon, but I just can’t get on board with it.) and let cool.
  3. When the sweet potatoes were ready, I scooped out the middle, leaving a pretty good sized rim of potato there.
  4. Added bacon pieces, then put my raw egg in.
  5. Back in the oven for 5-7 mins, until the white was cooked.
  6. Salt, pepper, eat.

So, some notes:

  • Don’t keep the potatoes with egg in the oven too long; it’s sooo much yummier when the yoke is runny.
  • I made mashed sweet potatoes with the leftover insides of the potato for dinner. I’m sure it’s dealer’s choice, but they were awesome so I used them that night.
  • This recipe was really similar to another one I’ve done in the past… this was a lot less dishes, and still tasted pretty good. Being honest I liked the other one better, but it’s nice to have choices.
  • Don’t forget to spray the foil lightly with cooking spray when you put the halves back in the oven with the filling. I didn’t, and mine stuck to the bottom 😦
  • I saved the other two halves for breakfast today, and it just wasn’t the same. My suggestion is to make these on the same day you eat them. Heating up the egg twice is a real deal breaker.

This morning I sat at my desk to begin work, and saw a soaring bird through my window. Wings spread, majestic, floating with the currents as they blew him on a gray-blue sky. It was beautiful, and it got me thinking about freedom.

I’m reading a book now called The War of Art by Steven Pressfield. It’s about how to overcome Resistance (ie, your own self-doubt and self-sabotage) in order to create art and live “your unlived life.”

He says, “Most of us have two lives. The life we live, and the unlived life within us. Between the two stands Resistance.  ….Resistance deforms our spirit. It stunts us and makes us less than we are and were born to be. …it prevents us from achieving the life God intended when He endowed each of us with our own unique genius. …everyone who creates operates from this sacramental center. It is our soul’s seat, the vessel that holds our being-in-potential, our star’s beacon and Polaris.”

I’ve spent so. much. time. (as I’m sure you have, too) doing things I *HAVE* to do because someone else told me I *HAD* to do them. But, do we really? While we’re living our daily lives, our unlived lives are beating at the door of our psyche, flapping their wings against the bars, dying to get out and [insert your dream here] — travel, paint, be a makeup artist, volunteer in Uganda (does Uganda need volunteers?) … you get the picture.

WHAT WOULD YOU DO if you threw off the shackles of your life and went on an adventure? Just for a month. Imagine it … your kids wouldn’t be affected, you’d still have a job when you got home, you had an unlimited budget. What would you do??

The thought should scare you – it’s okay! Pressfield calls that the Resistance that keeps us where we are. If you’re scared, if you are – aha, resisting the idea because of all your very well justified reasons – then you know it’s the unlived life you’re missing.

They tell us we’re only allowed to have big dreams when we’re in Kindergarten talking about what we want to be when we grow up. But if someone asked the older, wiser you today, would you know the answer? And would you have the courage to go after it?

 

Monday Check-in

Hello, friends! Here’s my check-in.

It’s Day 5, and I’m now down 7lbs. (Isn’t that crazy?! It’s always crazy to me how much you drop right away doing this.) But, things will inevitably slow down so I’ve got to get a plan together for the 13lb I have left to hit 20 by Easter, which is Sunday, April 16th.

The goals for this week are:

  • Drink 8 glasses of water every day (we have the 16oz glasses so that’s a lot)
  • Start taking vitamins (I need to purchase prenatal gummies)
  • Work out at least 3 times this week
  • …and, obviously, don’t mess up!

I was having a major sugar craving crisis today, but solved it with some lemon water. I also like the fruity herbal teas when I want something sweet that doesn’t have sugar in it.

Tomorrow should be fine, but Mark’s mom is coming to stay on Wednesday/Thursday, so I have to make sure I don’t make unhealthy things just to be a people-pleaser. Or, if I do, not get near them myself! I also have this grandiose idea of hosting a tea party at our house. I’ve already told myself the earliest we could possibly do that is late April. I’m heading into the Belly of the Beast on Thursday (aka Bensalem) to show my face and wish my soon-to-be former coworker happy trails.

IS IT ONLY MONDAY RIGHT NOW?! lol!

It’s 10:15pm, and I’ve been going since 6am. I’m ready to drop dead. That’s the other thing about not getting sugar… there’s no crutch to prop you up when you’re ready to fizzle out! Maybe my goal for next week should be to get a solid 8 hours of sleep every night.

Today was another leftovers day, but tomorrow I’m hoping to make these…

Weekend Roundup!

This weekend has been a blast.

First, I didn’t have to work (like I thought I did), so I got to go to Rehoboth Beach with my mom, sister, and niece to celebrate my mom’s birthday. We ate, we shopped, we laughed, and spent +12 hours just enjoying each others’ company. It was an amazing day. We even got to see the ocean!

The best part? I didn’t go off my plan, and I wasn’t even tempted despite the many awesome things that crossed our path… like the Chocolate Thunder From Down Under at Outback lol.

I even picked up some new jeans for myself that actually fit, and tossed those jeggings I mentioned I’ve been wearing constantly. It was a great goodbye, as they have long since served their purpose.

I also found out we have some amazing things on the horizon for us!

  • MOM-MOM IS COMING!!!! AHHH!!! I CANNOT WAIT! She’ll be here for Easter in time to see my amazing bod (BAHAHA) … more motivation if there was ever any. The last time she saw Mark she called him fat, and he’s still upset LOL
  • My nephew is going to be Christened in the Catholic church at the end of April!
  • Easter is going to be at Jenny’s again, and I can’t wait to celebrate her favorite holiday 🙂
  • WAYNE IS MOVING BACK HOME!
  • Michelle’s birthday party is next weekend, so we get to celebrate her being an old fart just like me *evil cackle*
  • Aunt Nanea and Uncle Johnny are coming up to celebrate birthdays with us, and it will be GREAT to see them again! It’s been a while!

…is there anything else? I’m sure there is, I might just not be catching it all right here. OH YEAH! The Flyers are NOT in the playoffs, so my husband’s summer will be starting early this year! Woohoo!

I made that amazing roast again the other night and have been steadily devouring it. My son had two huge pieces himself today for lunch!! It’s a major win over here. I took some pics to catch up since I didn’t do that last time. I cooked it a little longer, and I also picked up rosemary. I had to used some good ‘ole fashioned thinkin’ on timing it again, since I broke the brand new meat thermometer I bought specifically for this purpose. UGHHH.

Today, we woke up bright and early, got dressed, and headed over to see Michelle’s new house and “help” her paint! We didn’t help… in fact, we probably hindered more than helped… but it was so great to see the place and spend time with her!

Now….. off to work on my book, then later, singing Happy Birthday to Mimi with a homemade birthday cake from my niece and nephew, the chefs! Later, the hubs and I are going to snuggle and rent a movie. Can’t wait!

Jack of all trades…

I was grumpy when I was thinking about this quote, and after reading the real one, it makes being “well-rounded” seem like a way more positive thing. When I was in high school we were told we needed to be well-rounded in our activities (good grades, theater, sports) in order to get into good colleges, so we all busted our asses doing things we didn’t excel at. It was good because it taught you to take risks, persevere when it would have been easier to give up, etc. But after you got INTO college, you were supposed to pick an area and specialize… and that specialization would be what you decided you were going to do with the rest of your life.

But what about the people who got really good at being “well-rounded,” becoming jacks of all trades and the master of none?

I’ll tell you. We got Liberal Arts degrees and work jobs we’re not 100% in love with! HAHA!

There’s a lot of flux in my company right now… today we’ve lost our 4th team member in only a little over a month, and I’m feeling like (1) I should abandon ship, and (2) already stressed out by the potential work coming to my overloaded plate. It would be so much easier to jump to another trade… another one I haven’t mastered… but I don’t want to do that anymore. Like in marriage, my next one is going to be a calculated move for money and status, not love.

Yes, I said it. LOL

On a more (interesting) note, I made roasted broccoli last night for the first time! I used the Goddess of Paleo’s recipe here… but instead of pancetta I used bacon leftover from breakfast. It was delicious! (Please disregard the weird picture… the light wasn’t on and I was rushing because I WAS STARVINGGG!)

I have no idea what I’m going to be doing with my long-term life, but my short-term one is pretty good. I exercised last night for the first time since we moved into our new house, I just had some yummy leftovers for lunch, and I bought the amazing BLUE MACHINE Naked juice, which I’m obsessed with. It’s all natural and I feel like I’m hooked up to an IV of vitamins when I drink one. Instant mood booster!

Who is looking forward to the weekend?! I don’t know about you, but I can’t wait to sleep… I’ve been under the weather for a few days now and things are starting to catch up with me. I hope you have a GREAT day today! ❤

The 40-Day Bet

March 1 (TODAY!) is so awesome for a lot of reasons.

  1. It’s my momma’s birthday. HAPPY BIRTHDAY, MOM! ❤
  2. This year, it’s the first day of Lent. Helloooo Ash Wednesday, to all the Catholics out there!
  3. It’s been 3 months since we thought about all those New Years Resolutions we made, eh? GET ON IT, it’s never too late to start/continue/regroup!
  4. Today will henceforth be known as The Day Mark Dared to Challenge Me. Yep, it’s on.

My story is this.

As you may (or may not) know, I can’t get my sh*t together. I’ll be doing really great, and then something will happen that will totally throw off my game and then it’s like, all inhibitions are out the window and that momentum is gone.

WELL.

Mark and I were talking today and I said, you know, it’s March 1st… first day of Lent… we should really give up eating bad and get our sh*t together (ie, our standard weekly conversation). He agreed, as he always does.

Then I said, “You know, it would be really great to lose twenty pounds before Easter. I think I could do it.” He huffed a laugh and said, TWENTY? Why don’t you try for, like, twelve. We’ve got tons of birthdays in March (he rattles them all off, yes, I know, March is busy) and then says, “You can lose probably 10 in the first two weeks, and when you mess up after that, you’ve got only two more to go to make your goal before Easter.”

I will show you, mister. You think you know I’m going to MESS UP and need a little buffer? HAH! WATCH THIS! You are all now (unwilling) witnesses to our morning shenanigans.

TWENTY POUNDS BY EASTER…… HELL OR HIGH WATER. (does anyone even know what that saying means?!) So far today we had gorgeous strawberry salad, eggs, and lots & lots & lots of water. For dinner it will be chicken and veggies. AND, I am even going to exercise! A lot! Like, every day maybe!

Baby plans are currently on hold anyway, and it’s only forty days.
